All three of our kids love these pancakes! They are made with whole wheat (duh) and wheat germ, so they have an amazing fiber content, but not cardboardy as whole wheat can do to some recipes.
1 cup whole wheat flour
2 1/2 teaspoons baking powder
1 cup cashew milk
1 teaspoon baking soda
2 tablespoons melted butter
Just whisk the wet ingredients together in a large bowl, and the dry ingredients separately in a smaller bowl. Then mix the dry into the wet.
Make sure your pan / griddle is hot enough! You can add a little butter to the pan to crisp up the edges.
