  • ½ cup old fashioned rolled oats
  • 1 cup water
  • ¼ cup pumpkin pie filling
  • 1 tsp chia seeds
  • 1 tbsp walnut pieces
  • 1 tbsp pumpkin seeds
  • 1 tbsp ground flax seeds
  • ½ tsp cinnamon
  • 1 tsp brown sugar

  • First, make the oatmeal, of course. Bring the water to a boil and add the oatmeal. Reduce to a simmer and cook for about 10 minutes. Pour into a bowl and get to your toppings.
  • Chop your walnuts into spoon-friendly sized pieces and sprinkle all the toppings over your oatmeal!

You can swap the pumpkin pie filling for plain pumpkin.
Adding a nut milk, like almond or cashew at the end is a nice touch or you can even cook your oatmeal in it to make it extra creamy.
