These fun cookies are exactly the same as my original chocolate chip cookies, but with vegan Becel in place of butter, and the addition of the Sweetapolita rainbow chips!

1/2 cup sugar
1/4 cup brown sugar
1 teaspoon vanilla
1 egg
1 1/2 cup flour
1/2 teaspoon baking soda
3/4 cup chocolate chips
1/4 cup rainbow chips
- Preheat oven to 350F.
- Whisk flour and baking soda, set aside.
- Cream butter and sugars. Add egg and vanilla.
- Mix flour mixture into butter mixture.
- Stir in chocolate chips.
- Bake for 8 minutes.
* The Sweetapolita chips are not dairy free, but not enough to bother any tummies here. To make it truly dairy free, all the chocolate chips should be labeled dairy free.
