Rainbow Chocolate Chip Cookies (dairy free)

These fun cookies are exactly the same as my original chocolate chip cookies, but with vegan Becel in place of butter, and the addition of the Sweetapolita rainbow chips!

1/2 cup butter, softened, but not melty
1/2 cup sugar
1/4 cup brown sugar
1 teaspoon vanilla
1 egg
1 1/2 cup flour
1/2 teaspoon baking soda
3/4 cup chocolate chips
1/4 cup rainbow chips

  1. Preheat oven to 350F.
  2. Whisk flour and baking soda, set aside.
  3. Cream butter and sugars. Add egg and vanilla.
  4. Mix flour mixture into butter mixture.
  5. Stir in chocolate chips.
  6. Bake for 8 minutes.

* The Sweetapolita chips are not dairy free, but not enough to bother any tummies here. To make it truly dairy free, all the chocolate chips should be labeled dairy free.
