These little treats are so good! They’re sweet enough to be an afternoon treat, but at 55 calories each they’re light enough to have a few!

1/2 cup pumpkin puree
3/4 cup rolled oats
3 tablespoons chia seeds
3 tablespoons chopped walnuts
1 teaspoon vanilla
1 tablespoon maple syrup
1 teaspoon cinnamon
1 teaspoon pumpkin pie spice
1/2 cup dairy free chocolate chips
1 tablespoon coconut oil
The method relies pretty heavily on your food processor.
I start with the oats, chia seeds and walnuts in the food processor. I pulsed until they were all roughly mixed together.
Then I added the pumpkin, vanilla, maple syrup, and spices and pulsed again.
I rolled this dough into little balls. Try to get them as uniform as you can so you can coat them nicely in chocolate.
Then I let them chill in the fridge for a while while I melt the chocolate chips and coconut oil.
The last step is to cover the balls in the melted chocolate. I’m not going to lie, this is kind of a messy process, but worth it!
