Oatmeal Cookies (dairy free, gluten free)

I’ve been making these cookies from a stained index card for almost 20 years! This recipe is actually my grandmother’s oatmeal cookie recipe. I just subbed Bob’s Red Mill 1 to 1 gluten free flour for the all purpose flour and vegan Becel for the butter and they taste just like the original!

3/4 cup Bob’s Red Mill 1 to 1 gluten free flour
1/2 teaspoon baking soda
1/2 cup Vegan Becel
1/2 cup granulated sugar
1/3 cup packed brown sugar
1 egg
2 teaspoons vanilla extract
1 1/2 cups gluten free oats

  1. Whisk the flour and the baking soda.
  2. Cream the butter and the sugars
  3. Add the egg and vanilla.
  4. Stir in the oats.
  5. Bake at 350 for 10 minutes.
