This garlic spread is crazy simple, and while it’s intended to be laid on thick over a baguette and toasted under the broiler, it can really be used on any kind of bread-like thing you want to slather with garlic.
English muffins, bagels, scones, even trusty sandwich bread works. Just spread this over the surface of your bread of choice, and broil in an oven (or toaster oven, or air fryer or whatever it is) for just a few minutes, keep an eye on it. Then cut it with a good bread knife and you’re all done!
Of course you can mash the garlic into absolute mush and incorporate that into your butter, personally I like to leave some chunks because I like they way they crisp a little under the broiler and pack a punch.
- 2-3 heads garlic
- 1 tbsp olive oil
- ½ cup butter dairy free
- 1 tbsp parsley
- Preheat oven to 440F.
- Cut the heads off the garlic and drizzle with olive oil, roast for 30 minutes.
- Let cool and pop the cloves out into a bowl. Mash into paste, you can leave some chunks if you prefer (like I do).
- Add softened butter and parsley, mix until well combined.
- Spread over whatever bread you have on hand and broil for just a few minutes. Watch it closely so it doesn't burn!
