This very basic bean soup recipe is meant to be a base for adding leftovers to. My dad makes this soup based off what’s in the fridge, so it looks different every time he makes it!
All you need to get started are a handful of staples you likely already have and then add in whatever else you need to use up.

Basic Bean Soup Base:
1 box vegetable stock
1 can beans (black, red kidney, pinto, mixed, whatever)
1/2 onion
1-2 cloves garlic
3-4 small potatoes
1 carrot
your favorite seasonings

From there, open the fridge and see what you have. Some days I’ll add in leftover chicken and rice from the night before, or maybe half a bell pepper from lunch a few days ago. Or you can open the pantry and pick out things you only have a little left of, but not enough to make something from. Only have 1/4 cup of pearl barley left? Or maybe just a handful of red lentils? Add them to the soup!

The only downside to this soup is how impossible it can be to recreate when you come up with an accidental combination you love!
