Banana Oatmeal Pancakes

I played around with this recipe before I started my self inflicted 100 day transformation. I wanted a simple breakfast with fiber and protein. These are great because they keep well in the fridge and are so good with berries and real maple syrup!

Ingredients:

1 cup oat flour (just put oatmeal in the food processor if you don’t have any)

1/2 cup rolled oats

1 teaspoon baking powder

2 eggs

1 cup mashed bananas (about 2 medium bananas)

1 teaspoon vanilla

3 tablespoons oil of your choice (I used canola)

Directions:

Once you grind the oatmeal until oat flour, mix it up with the rolled oats and the baking powder.

Mix the eggs, mashed bananas, vanilla and oil in a separate bowl.

Combine them all together and fry them up like you would any other pancake.
